100% Gamay Saint-Romain from old vines farmed with organic and biodynamic methods, planted on a 4-hectare parcel, situated at an altitude of 520 metres, and showing a terroir of granite soils. Ploughing, natural grass cover crops, disbudding, leaf thinning as well as harvesting by hand are all practiced. Vinification: de-stemming for 3/4 of the harvest, maceration for 18 days, some punching down of the cap, and maturation in large conical vats and casks for 11 months.
