Fully de-stemmed into small open vats with a total of 15 days on skins. During this time the cap is hand plunged to encourage gentle extraction.  Basket pressed and racked to one single second fill barrel. Tiny production!

Dark and intense colour. Deep dark fruits of plum, blackberry and dried flowers. While herbs with spices add great depth. The tannin is ample without overwhelming. juicy and bright fruits support. Delicious now but will reward.
